Peanut Butter Cookies, Using 3 Ingredients

Looking for a SUPER EASY cookie idea? This is it! 3 ingredients and you are on your way to perfection. And as an added benefit, they are gluten free!! That’s actually how I found about this recipe. My oldest daughter has celiac disease. I’m always looking to keep food simple, but still delicious!

Ingredients:
2 eggs
2 cups of peanut butter
2 cups of sugar

Yep! That’s it!!

Directions:

1. Preheat oven to 350* 2. Mix ingredients well, until smooth

3. Drop spoonfuls of batter onto a greased cookie sheet and bake for about 10-12 mins
***Try not to over bake. These cookies are amazing when they are still a little soft!

Hands down the best peanut butter cookies I have ever tasted. Enjoy!!

Did you know that Gorton’s Seafood has 20 products at 200 calories or less per serving?  I love the Skillet Crisp Tilapia and the Grilled Shrimp.  The Skillet Crisp Tilapia is AMAZING and the Grilled Shrimp makes such a fast and easy addition to so many meals such as salads, pastas, and so much more.  Here are all 20 of the products that are 200 calories or less:
I was selected my Gorton’s to try out a few of their 20 products that are 200 or less calories per serving.  They sent me an apron, 2 oven mitts (how did they know my old pair recently ripped and I burned my hand?), a spatula, and 5 coupons for FREE products.  I went to Publix this past week to purchase some of the Gorton’s products and I was so excited because Publix was having a BOGO sale on Gorton’s products so I was able to purchase 10 packages instead of 5.  My younger daughter LOVES salmon so I bought several packages of the Simply Bake Salmon.  She loves salmon so much that she asks for it as a snack after school.  Crazy, right?  But I love that the Gorton’s Simply Bake Salmon comes in 2 individually sealed portions so I can just grab one for her after school and it is only 140 calories, 2.5 grams of fat, 21 grams of protein.  Much healthier than so many other snacks but it also makes a great meal, too.

Our oven is broken and we haven’t gotten a new one yet so I love that I am able to make the Simply Bake Salmon in our toaster oven.  It takes about 25 minutes and because it cooks in it’s own sealed pouch there is no clean up.  The roasted garlic and butter flavor salmon has the perfect amount of flavor without being too overpowering.  I decided to serve the salmon just the way it came for my daughter because I wasn’t sure if she would eat it if I turned it into a recipe.

I also purchased the Garlic Butter Shrimp Scampi and decided to turn it into shrimp scampi and brown rice.  I knew my daughter would love the garlic butter flavoring from the shrimp and I would be able to get her to eat some multi-grain brown rice if I mixed the garlic butter and shrimp with it.  Each shrimp came out of the bag surrounded by the garlic butter.  I started out putting all the shrimp on a plate (see picture above) but then decided to just make one serving to go with the rice.  One serving of garlic butter shrimp scampi (about 6 shrimp) is only 120 calories, 5 grams of fat, and 10 grams of protein.  Much lower than I would have thought with a garlic butter sauce!
One tip- Make sure to always read the directions carefully first.  I didn’t read the directions for the shrimp right the first time and I cooked them on a plate in the microwave with plastic wrap and the plastic wrap melted into the shrimp.  After I threw that batch away I read the directions and and realized that it said to cook the shrimp in a BOWL in the microwave with the plastic wrap, not on a plate.  And the package of plastic wrap said that if it came in contact with foods that were high in fat it might melt.  Too bad I didn’t read carefully the FIRST time.

The second batch of shrimp came out perfect and there was plenty of garlic butter sauce to mix into the rice.
I added some green beans to complete the meal and it was a hit!
Both the Simply Bake Salmon and the Garlic Butter Shrimp Scampi were easy to make even without having a working stove or oven.  I am looking forward to purchasing a new oven this week so I can try sauteing the shrimp on the stove top next time.  I would also like to get more creative with other recipes using the shrimp and the salmon when I have a working stove.

This is what you do:

Bake your desired cupcakes and let cool. To make your coconut green add about 10 drops of food coloring and mix well.

Do the same with vanilla frosting. Arrange the coconut on top of the frosted cupcake in a nest like shape. Add candy eggs and there you have it! Super easy and delicious cupcakes that are fun for all ages!

Have you tried Dole Fruit Parfaits?  They are made from natural fruit and have only around 120 calories and 2 grams of fat.  Rich in vitamin C, these yummy treats are great when you want a quick snack, craving something sweet, or just need to take a moment to treat yourself.  As moms we often take care of everyone else but ourselves.  Taking care of yourself doesn’t have to be a lot of work or cost a lot of money.  Dole Fruit Parfaits have a suggested retail price of only $2.79/per package of four so indulging yourself with one won’t break the bank.  Sometimes it is nice to take some time for yourself and give yourself an escape with a little treat.

Dole Fruit Parfaits come in 3 delicious flavors-  apples & creme, pineapples & creme, and peaches & creme.  They are light and creamy with real fruit on top and a smooth layer of delicious, light tasting creme on the bottom.  I think the apples & creme one is my favorite because I can have one when I am craving apple pie and it hits the spot.  Their creamy bottom layer really hits the spot when I want a sweet and creamy treat.

They can be stored in the cabinet and don’t need to be refrigerated but I personally like them even better when they are nice and cold from the refrigerator.  I hadn’t thought to try this until right now but I think I am going to try to freeze one of each flavor and see how they turn out.  I like freezing apple sauce and other types of fruit so I bet the Dole Fruit Parfaits will taste great frozen, too.  I’ll update on my results soon.

Dole Fruit Parfaits are naturally low fat, cholesterol free, and very low in sodium so they are a treat you can feel good about.  You can find them in the canned fruit section at select grocery retailers and online.  If you can’t find them at your local grocery ask your store manager if they can start carrying them for you.

Take a look for our video eBooks that can be downloaded from the iBookstore: https://itunes.apple.com/us/book/puff-pastry/id620080805?ls=1 Ingredients: For the crust: 1 cup (250 mL) unsalted butter, softened ⅔ cup (150 mL) packed brown sugar 2⅔ cups (650 mL) all-purpose flour ½ tsp (2 mL) salt For the filling: ½ cup (125 mL) unsalted butter 1 cup (250 mL) packed brown sugar ⅓ cup (75 mL) honey or maple syrup, corn syrup 2 Tbsp (30 mL) 35% cream 2 cups (500 mL) chopped pecans Method: Preheat the oven to 350ºF (180ºC) Line a 9×13″cake pan with parchment paper, leaving enough for a 2-inch overhang on long sides. Cream together butter and brown sugar until fluffy. Add in the salt and flour mixing until crumbly. Press the crust into the parchment lined pan and bake for 20 minutes or until golden brown. While the crust is baking, prepare the filling: combine butter, brown sugar, honey and 35% cream in a saucepan; stirring it over medium heat. Bring the mixture to a simmer and cook for 1 minute, then stir in the chopped pecans. Immediately pour the pecan filling over the still hot crust; spreading it evenly to cover. Place the pan back into the oven and bake for an additional 20 minutes. Don’t over-bake! After baking allow the bars to fully cool in the pan before lifting out and cutting.
