Hello everyone!!  I decided that I wanted to create a blog and reach out to all of you amazing people! Each and every one of you has your own story and goals in life.  All of you are important, we all have a purpose!  One of my desires is to help end the trend of obesity that has swept our nation and help people to lead happier and healthier lifestyles.  This growing epidemic isn’t going anywhere unless we take a stand now and make a change!!  It kills me to know how many people are slowly dying due to all the processed foods they eat and with little to no exercise many people are going down hill very fast!  But we can change this and I am here to help.  Even if you don’t have weight to lose (who wouldn’t want to lose a few lbs!) you can still improve your fitness.I’m going to share my personal story with you so you will know that I know exactly how it feels, I used all the excuses, I went through a very difficult time. I was in an abusive relationship, I was in pretty good shape then but after I finally got myself and my children away from the domestic violence we ended up homeless and living in a shelter for awhile. I was finally able to get my own place but the pain and memories were still there. I was so depressed, I ate my feelings away, I didn’t even think about what I was putting in my mouth….before I knew it I had gained over 40lbs!! YIKES!! I got myself into gear though, I started eating healthier and exercising daily. I have lost 30lbs in two months and still going!! I have never felt better and I really would love to help all of you reach your goals, whatever they may be!!!
I am not a nutritional expert by any means but I am learning and studying to be a personal trainer. I am doing this because I truly care about this and love to help people. Nothing is greater than making someone else’s dreams come true! Feel free to reach out to me, would love to hear from you!!

Pecan Pie! In a cookie bar… Soo good! Take a look for our video eBooks that can be downloaded from the iBookstore: https://itunes.apple.com/us/book/puff-pastry/id620080805?ls=1 Ingredients: For the crust: 1 cup (250 mL) unsalted butter, softened ⅔ cup (150 mL) packed brown sugar 2⅔ cups (650 mL) all-purpose flour ½ tsp (2 mL) salt For the filling: ½ cup (125 mL) unsalted butter 1 cup (250 mL) packed brown sugar ⅓ cup (75 mL) honey or maple syrup, corn syrup 2 Tbsp (30 mL) 35% cream 2 cups (500 mL) chopped pecans Method: Preheat the oven to 350ºF (180ºC) Line a 9×13″cake pan with parchment paper, leaving enough for a 2-inch overhang on long sides. Cream together butter and brown sugar until fluffy. Add in the salt and flour mixing until crumbly. Press the crust into the parchment lined pan and bake for 20 minutes or until golden brown. While the crust is baking, prepare the filling: combine butter, brown sugar, honey and 35% cream in a saucepan; stirring it over medium heat. Bring the mixture to a simmer and cook for 1 minute, then stir in the chopped pecans. Immediately pour the pecan filling over the still hot crust; spreading it evenly to cover. Place the pan back into the oven and bake for an additional 20 minutes. Don’t over-bake! After baking allow the bars to fully cool in the pan before lifting out and cutting.

The mojito certainly gets the most play of any muddled drink, but others deserve a moment in the spotlight, too. Case in point: this surprising kiwi cobbler cocktail, which builds layer upon layer of flavor thanks to a tequila base and the addition of vanilla bean, sugar, soda water, and freshly muddled mint leaves and kiwi fruit. Watch the video, then print out the recipe and try it for yourself.

Why We Bake Bread at Home

Thank you for visiting Cori's Cozy Corner! Please make sure to like us on Facebook, follow us on Twitter and subscribe to our E-mails!
Have you ever left a loaf of store bought bread to sit on the counter and see how long it takes before it goes bad? I haven’t done it on purpose, but after “losing” a loaf when the kids helped me put away groceries and I found it over a month later with no mold, I decided it was time to do something! Now, I part of our Sundays baking the bread for the week. It’s not as time consuming as it sounds, we’re paying about the same per loaf as we would for the cheapest bread in the store and the family loves it!
Ingredients
3 cups warm (110 degrees) water
2 (.25 ounce) packages active dry yeast
1/3 cup honey
5 cups bread flour
3 tablespoons butter
1/3 cup honey
1 tablespoon salt
3 1/2 cups whole wheat flour
2 tablespoons butter
Directions
1. In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
2. Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour.
3. Flour a flat surface and knead with whole wheat flour until the dough is just pulling away from the counter, but still sticky to touch. Depending on the loaf, humidity in the home, etc, this will take 2-4 cups of flour.
4. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
5. Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
6. Bake at 350 degrees F  for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely
