Happy 4th of JulyThis is a simple way to make elegant strawberries for 4th of July.  You just need fresh strawberries, white chocolate, and blue sugar sprinkles or any other 4th of July themed sprinkles.
It is very simple to make these strawberry and they come out so pretty.  My girls love to help me and anytime I can get them to help in the kitchen and spend family time with them is always a good time.

To make these strawberries wash and dry your strawberries well.  The chocolate will not stick wall if the strawberries are wet.  Melt white chocolate according to the package either in the microwave or with a double boiler until smooth.  Dip one side of the strawberry on an angle and then dip it on the other side at an opposite angle so it forms a “V”.  Allow excess chocolate to drip off back into the bowl.  Once you dip both sides of the strawberry I find that the dip into the sprinkles better if you allow the chocolate to cool slightly first so place the dipped strawberry onto a parchment lined cookie sheet.  Continue dipping other strawberries.  After about 5 minutes when the chocolate is starting to firm up a little, dip one side of the white chocolate area in blue sugar sprinkles.  Allow the strawberries to harden before serving.  You can put them in the refrigerator to speed up the hardening process.  For best results, serve the day they are made.  You can make them the day before, too, but don’t make them any sooner or they will not look as good and the strawberries will start dripping and pulling away from the chocolate.  Store leftovers in the refrigerator.

TIP- When you put the strawberries on the parchment paper I like to slide them forward slightly on the sheet so there are no big blobs of chocolate in front of the strawberry which should be the prettiest side.

Produce KeepersLooking for a way to store your unused produce?  Check out the Produce Keepers from Good Cook.  Store unused peppers, melons, tomatoes, grapefruit, lemons, bananas, and asparagus in these colorful produce keepers.  These shaped food storage containers are designed to represent the produce it stores and are easy to identify in the refrigerator.  But you don’t have to let the shapes restrict what you put in them.  I use the asparagus keeper to keep my fresh herbs, the melon keeper to keep fruit salad, fresh berries, and lots more.  If it fits, you can keep it in any Product Keeper.  Keep them crisp and fresh longer in these specialized, transparent lid containers.   I love that the lids are transparent so I can easily see what is inside.  They prevent contents from spoiling and smelling.

Here’s a recipe my 9 year old daughter came up with using our Produce Keepers.
It makes a great 4th of July or Memorial Day dessert.
Red White and Blueberry Parfaits

Ingredients:
Vanilla Yogurt (about 1 cup per parfait)
Strawberries (about 4 per parfait)
Blueberries (about 1/2 cup parfait)
Raspberries (about 1/2 cup parfait)
Whipped Cream
Granola (about a 1/4 cup per parfait)
Sprinkles (optional topping)
Fresh mint (optional garnish)
parfait supplies
Wash berries and cut up strawberries
Fill cup with a few tablespoons of yogurt
Place strawberry pieces in a layer on top of yogurt
Layer with yogurt
Layer with blueberries
Layer with yogurt
Layer with raspberries
Layer with yogurt
Top with granola
Top with whipped cream
Garnish with more berries, sprinkles, and/or mint as desired
Enjoy!

Easy Taco BakeI love recipes that are easy to make on a busy weeknight and this one certainly fits that.  Here is an easy Taco Bake recipe that my family loves (well 3 of us anyway, my little one doesn’t like Mexican so she gets something else on Taco Bake night). 😉

Ingredients-
1 can Hormel Chili with Beans
1 can whole kernel corn (drained)
1 can diced fire roasted tomatoes (drained)
1 can refried beans (I prefer traditional)
1-2 cups shredded cheddar cheese depending on how cheese you like things
1 bag tortilla chips (any brand)

Toppings-
1 cup sour cream
1 package dried Ranch dressing mix
Shredded lettuce
Sliced black olives
1 Can Rotel (any variety, I like the one with tomatoes and cilantro)

taco bake 4 final 21. Preheat oven to 350 degrees.  Layer tortilla chips on the bottom of a baking dish.  They can overlap and don’t have to be totally flat.
2. Spread chili evenly over chips.
3. Spread 1/2 cup shredded cheddar cheese over chili.
4.  Spread can of corn (drained) over cheddar cheese.
5. Spread 1/2 cup of fire roasted tomatoes over corn
6. Spread refried beans over tomato layer.
7. Spread 1/2 cup shredded cheddar cheese over refried beans layer.
8. Bake for 15 minutes on 350 degrees until warm throughout.

9. While taco dish is backing, put 2 large handfuls of tortilla chips inside a plastic bag.  Use a rolling pin or can to crush the chips.  Kids love this part!
10. When taco bake is warmed throughout, spread crushed tortilla chips on top.
11. Sprinkle tortilla chips with cheddar cheese.
12. Bake until cheese is bubbly.
13. Combine 1 cup sour cream with 2 Tbs. of powdered Ranch Dressing Mix (optional).
14. Serve with shredded lettuce, Rotel, black olives, Ranchy sour cream, or whatever taco toppings you like.
It doesn’t get much easier than this!

Dinnertime during a busy week can sometimes be the most stressful time of the day.  I try to cook for my family as often as possible but sometimes I get home and realize that I forgot to plan something for dinner.  That’s why I love cooking with canned fruits and vegetables, too.  Canned fruits and vegetables sometimes get a bad rap but canned is one of the best ways to get food from the farm to my family’s table.  Canning locks in the foods’ freshness, flavor, and nutrients at the peak of ripeness.  This way I can serve canned foods no matter what the season and know that they will be fresh.   Canned foods also help me stretch my budget because they last a long time, I can usually find coupons and sales for them, and most importantly, we waste a lot less when we use canned foods.  Did you know that 73% of Americans throw away spoiled fruits and vegetables on average of two times per week?   I hate throwing away spoiled fruits and veggies so canned is a great option.  I try to serve the fresh fruits and vegetables the first few days after my grocery shopping and then use canned foods towards the end of the week so we have less waste.

The “Cans Get You Cooking” program spreads the message that the amazing technology of modern canning seals in freshness, flavor, nutrition, and goodness.  It is very similar to the way our grandparents and great grandparents used to naturally preserve food.   If you are worried about excess sodium in your foods, just make sure to drain and rinse you canned vegetables before you cook them.  Cantry 1-3
Having a well stocked “cantry” makes busy nights much easier and I feel good knowing that I am serving my family healthy, nutritious meals.  My normal stocked “cantry” has Del Monte corn and green beans, Goya  beans of all types (black, pinto, kidney, etc.), Progresso soups and stocks, Hormel chili, and lots of Old El Paso products.  I like to grab these items when they are on sale and stock up so I always have them on hand.  I also make sure to always have canned tuna and canned salmon on hand as well for tuna salad and salmon croquettes (I will have to post that recipe in a future post).

Here’s a fast, easy, and hearty taco soup that I like to make for my family.  You could add cooked ground beef or even canned chili if you want but with so many types of beans, there is already plenty of protein in it already.  What I like about this recipe is that I can omit or add items if I don’t have everything on hand and it is still yummy!  Plus it is so easy because can size really doesn’t matter so anyone can make this.

Ingredients-
1 can Goya Black Beans
1 can Goya Dark Kidney Beans
1 can Goya Pinto Beans
1 can whole kernel corn
1 can Del Monte creamed corn
1 can mild Rotel (or spicy if your family likes spicier foods, I prefer the mild with tomatoes and green chilis)
1 can diced fire roasted tomatoes
1 carton of Progresso chicken stock (or two if you plan on draining all your beans)
1 package of Old El Paso taco seasoning mix
fresh cilantro (optional)
sour cream (optional)
tortilla chips (optional)

taco soup final1. Combine first 8 ingredients in stockpot.  I don’t usually drain any of the cans.  If you choose to drain the cans first then you might need to add a second container of chicken stock.
2. Stir and cook on medium until warm throughout (about 10 minutes).
3. Stir in packet of taco mix and simmer for 5 minutes.
4. Sprinkle with fresh cilantro. (optional)
5. Serve (with tortilla chips as garnish- optional).
(I like to add a dollop of sour cream to the bowl right before serving.  Once stirred it makes the soup creamy.  The sour cream cools the heat of the taco mix and the Rotel nicely.)
