Remember last month when I reviewed Zaycon Foods here?  I have since ordered 40 pounds of ground beef from them as well and I am still a VERY satisfied customer.  It was only $2.89 for EXTRA LEAN 97/3 Ground Beef.  It came in 4 “logs” that were about 10 pounds each.  I was able to easily break it up into smaller packages to freeze.  I still have one log left that I am going to be making into meatballs and also browning it in crumbles for tacos and such.  Anyway, enough about that.  Here’s what you are waiting for, the giveaway!!!  Want to win your own 40 pounds of Boneless, Skinless Chicken Breasts?

    my fav chicken recipe is to take boneless breasts and put them in a shallow baking pan. add 1/3 cup lime juice
    season with garlic , salt and pepper.
    seal with tin foil and back at 350 for 30-45 min till cooked through. turning once after 15 minutes and re-sealing foil
    Uncover and top each breast with provalone cheese slices. turn oven to broil and cook just until cheese bubbles and starts turning brown.

    I ordered for the first time from them last month with the chicken breast. I was so disappointed I did not order more. Great quality meat and a great price. Can’t wait to order again!

    Opps forgot to add my favorite easy chicken recipe.
    I cut the chicken breast into small cubes and season to taste. You can even add some onion and bell peppers if you like. I then cook it in a pan with a little olive oil until cooked through.

    Cook your favorite pasta noodles and set aside. In our house we love bow-tie and angel hair pasta. I think the bow-tie work best with this.

    Once the chicken is cooked and the pasta, add it together in a pan with one tub of your favorite Philadelphia cream cheese cooking cream. Cook on medium-low, stirring frequently until creams sauce is heated and then serve.

    If you have a little extra time you can always leave it on low and let it simmer for a 1/2 hour. Adding other meats is an option too. My boys love when I add shrimp with the chicken. Many different ways to mix this up to fit your family.

  6. My favorite recipe for chicken is Fiesta Lime Chicken

    Sprinkle cilantro and garlic over chicken
    squeeze 4-6 limes over chicken

    marinate for 30 minutes

    bake at 350 for 20 minutes or until done

    Melissa’s Chicken
    Ingredients:
    2 chicken breasts
    1 cup mushrooms (sliced thick)
    1 tablespoon olive oil
    2 tablespoons lemon juice
    ¼ cup vegetable or chicken broth (low sodium)
    1 tablespoon capers
    Fresh rosemary – 1 sprig broken up into 4 pieces
    Ground black pepper
    Directions:
    Heat oil, lemon juice and broth in sauté pan.
    Cut up chicken into 1″ cubes and add to pan.
    Heat for 4 minutes; then add mushrooms, capers, black pepper and rosemary.
    Cook another 5-10 minutes, or until chicken is fully cooked.
    Reduce heat 2 minutes to sauté and let “sauce” reduce.
    Remove rosemary, and serve.

    KING RANCH CHICKEN
    4 large boneless skinless chicken breasts, boil until done, cut into small bite size pieces, save broth
    1/2 stick butter
    1 large onion, chopped
    1 large green bell pepper, chopped
    1 (10.75 oz) can cream of chicken soup
    1 (10.75 oz) can cream of mushroom soup
    1 (14.5 oz) can Red Gold Petite Diced Tomatoes Mexican Fiesta
    1/2 tsp. garlic salt
    1 tsp. chili powder
    1 tsp. cumin
    1 tsp. dried oregano
    10 corn tortillas
    1/2 pound shredded cheddar cheese

    Preheat oven to 350 degrees. Saute onions and bell pepper in butter until clear. Add the soups, Red Gold Petite Diced Tomatoes Mexican Fiesta, garlic salt, chili powder, cumin and oregano until fully heated. Cut tortillas into bite size pieces – drench the tortillas in the chicken broth to soften. Use a 9×13 inch baking dish and line the bottom with the tortillas, layer the tortillas with the filling mixture just enough to cover and add a layer of cheese. Continue this until the mixture is gone. For the final top layer, use the remaining tortillas and cover with cheese. Bake for 45 minutes or until cheese is melted and browned.

    I love lemon garlic pepper chicken==
    2lbs– skinless Chicken Breast
    1cup– lemon juice
    1/4 tsp–sea salt
    1/2 tsp–course ground pepper
    1– crushed clove of garlic
    poke the chicken breast with a fork, so this marinates into the chick ,put all ingrediences in a ziplock bag and set in frig, 4-6 hrs. Oven at 375-bake for35to45 minutes- reserve the lemon juice mixer, to make a sauce. Now the sauce is just a little tricky– in a SAUCE PAN POUR THE LEMON JUICE MIX. Steep to a low boil add 1/4 sugar, let it boil a moment– then whisk in 3 Tsp of cornstarch. this is thick now and the chicken is done. Pour this over the chicken, serve with Jasmin Rice. YUMMMMOOOOOOOOOOOOOOOO!

    Easy Shepherd’s Pie
    Ingredients
    •1 1/2 lbs ground round beef
    •1 onion chopped (I substitute onion powder or Lipton onion soup mix)
    •1 can each vegetable – whole kernel corn, sweet peas
    •1 1/2 – 2 lbs potatoes (3 big ones) (I use instant mashed potatos)
    •8 tablespoons butter (1 stick)
    •1/2 cup beef broth
    •1 teaspoon Worcestershire sauce
    •Salt, pepper, other seasonings of choice
    Method
    1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

    2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.

    3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.

    4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.

    5 Mash potatoes in bowl with remainder of butter, season to taste.

    6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.

    7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.

    Yield: Serves four.

    We just put chicken breast in italian dressing. Leave the chicken in dish over night. We just put the chicken in a pan for about 30 minutes or so and let it cook. It’s so easy, but yummy. We just put a simple toss salad with the chicken and serve.

    Chicken Divan-
    2-10oz. pkgs. frozen broccoli
    3c. chicken cooked
    2-10 1/2 oz. cns of cream of chicken soup
    1 c. mayonnaise
    1 T. lemon juice
    1 c. shredded sharp cheese
    1 c. soft bread crumbs mixed with 2 T. melted butter

    Cook broccoli till tender. Drain. Arrange broccoli in buttered 11×7 dish. Place chicken on top. Combine soup, mayonnaise and lemon juice and pour over chicken. Sprinkle with cheese and then sprinkle on the buttered bread crumbs. Bake 350 for 30 minutes or until bubbly.

  16. one that is easy and the kids love is sloppy joes

    I just cook hamburger, drain, season to your liking ( I use salt, pepper, garlic salt & onion powder) I then use ketchup, mustard and brown sugar and combine in the pan(so it’s a 1 pot meal), use like 3 parts ketchup to 1 part mustard. I sometimes use a little bbq sauce depending on the mood and flavor I want, and then to top it off use a baked potato or french fries…and your done…it is so easy and it gets gone quick.

    I love to take chicken (boneless and pre cooked), stuffing, cooked broccoli, crm of chicken, crm of mushroom, and shredded cheese and layer it in a casserole dish and bake for about 15 to 20 mins @350* (since everything is already cooked) It is so yummy and my kids eat it up!
