Blendtec Blender Review Including Easy Broccoli Cheese Soup Recipe

First let me start by saying how much I LOVE LOVE LOVE this blender.  I received a Designer Series BLENDTEC Blender with WildSide Jar as well as the Twister Jar.  I never realized just how much I would use a blender and how much I would come to rely on it in such a short time.  The Blendtec does everything from sauces and dressings, smoothies, ice cream (YES, ICE CREAM!) and frozen yogurt, milk shakes, whole food juicing, and it even makes hot soups and fondue’s.

It is so sleek looking and looks great on my kitchen counter.  It does not have any raised buttons to get dirty which is a plus in my kitchen.  The control panel buttons light up when you turn the blender on.  There are six different symbols on the blender control panel making it so easy to use.  There is a button specifically for smoothies so all I need to do is put the ingredients, in close the lid, and press the smoothie button.  The blender will blend the smoothie at the right speed and for the right amount of time for when I’m making.  There is also a setting for crushing ice or making milkshakes.  There is a button to make ice cream and frozen yogurt.   The button that looks like a whisk is to make batters, sauces, dips and dressings.  The button that looks like a citrus fruit with a drop of juice is the button to press when you want whole juice.  My absolute favorite button of all is the one that sets this blender apart from most other blenders.  It looks like a steaming bowl and it makes hot soups, syrups, and fondues.  No matter what the recipe, there are three steps to a perfect blend- add the liquids first, the solids in the middle, and the frozen items on top.  That’s all there is to it.  The blender came with the Fresh Blends Cookbook that had lots of delicious recipes to get me started and they also have lot of BLENDER RECIPES on their website but you are only limited by your imagination.

The control panel on the Designer Series Blendtec Blender also allows you to completely control the speed of the blender.  By placing a finger on the slider and dragging to the right you can increase the speed of the blender.  When you slide your finger to the left you can decrease the speed.  You can also touch anywhere on the slider strip to go straight to any desired speed.  It is just so easy and intuitive to operate.

In trying to eat healthy with my family I have been trying to use a lot more fresh fruits and vegetables in my cooking. The blend Tech blender has really helped with this.    I start off by making healthy smoothies in the morning with frozen fruits, fresh greens like kale and spinach, some ice cubes, and sometimes a little yogurt or Greek yogurt.

Later in the day I have been able to make several varieties of fresh, homemade soup for my family that we are all enjoying.  Plus a benefit of having soup before our meal means we fill up on the fresh soups with vegetables and get full faster.  I have made tomato basil soup, broccoli cheese soup, and my family favorite, baked potato soup.  It was so simple to make.  I precooked the potato and bacon and warmed up the milk on the stove.  Then all I had to do was add all of the ingredients into the blender and press the soup icon. It really was that easy.  I couldn’t believe how easy it was.  Check out the recipe linked below.

Soup has become a first course for many of our dinners lately but I have used the Blendtec throughout all of our meals.  I was so proud of myself for making fresh, homemade tomato sauce to serve my family. There is a recipe for making fresh pasta dough included in with the Twister Jar that I plan to tackle soon. It is made from one egg, some water, spinach, and whole wheat flour. I like that I’ll be able to make fresh whole-wheat spinach pasta from scratch to feed my family. That is not something I would have never thought to do or been able to do before I received the blender.  As I said, I’m trying to have my family eat healthier so I’ve been able to make lower calorie versions of our favorite salad dressings with the Blendtec.  There is a recipe in the cookbook that came with the blender for a garlic blue cheese dressing that is really delicious and only has 20 cal and half a gram of fat per 2 tablespoon serving.  It is nice and creamy and goes well on salads as well as using it as a dip for chicken nuggets or a spread for sandwiches.

Chocolate hazelnut spreads are very popular these days but they are loaded with fats and preservatives.  I was able to use the Twister Jar to make my own version that was much healthier.  The recipe is linked below.

Is it is cold in other parts of the country, but right now it’s hot here in Florida so my girls love coming home from school and having a cold treat. We throw some frozen fruit with some frozen 100% fruit juice into the blender to make a healthy sorbet. Sometimes we throw frozen bananas into the blender with some other goodies like chocolate chips, to make a healthier version of ice cream.

The blender is so easy to clean by simply adding a little soap and water and pressing the pulse button for a few seconds.  I find myself using the blender so many times throughout a meal because it’s so easy to clean in between each thing that I’m making.  Every day I find a new use for my Blendtec. I love that will grind up grains, grind raw meat for things like meatballs, shredded cooked meat for chicken salad or pulled pork, make doughs for breads and pizza, make homemade bread crumbs, and let’s not forget all the delicious frozen cocktails that it can make.  This is not your mother’s blender although I know once my mother sees what mine does she’s going to want one too.  I love that it is great for a novice cook, a busy mom who is trying to learn how to cook healthier for her family, and even for experienced cooks.  I truly believe that my Blendtec is helping me be a better cook.  I have been making so many things from scratch that I never would have even thought to make before.

Mother’s Day is coming up very soon. When your family asks what you would like, make sure to tell them you would like a Blendtec Blender.  You can choose from either of two different BPA-free jar styles.  The Four Side Jar measures up to 32 fluid ounces with the volume of 74 fluid ounces.  This jar is great for smaller recipes such as sauces dressings and nut butters.  The jar I received is the Wild Side Jar.  It is a five sided jar that measures up to 36 fluid ounces with the volume of 90 fluid ounces. This jar has a larger base which increases surface area.  The fifth side offsets the blending vortex, resulting in improved blending performance and reduced possibility of an air pocket forming above the blade. This jar is great for larger recipes as well as yeast breads quick breads and frozen desserts. The vented gripper lid and insert on either of the jars allows steam to escape while blending warm contents.  The inner insert makes it easy to add ingredients while blending.  The additional Twister Jar is great for thick recipes such as nut butters, hummus, baby foods, dips thick shakes, sauces, and so much more.  It comes with a special twister lid that features tines to pull dense food away from the walls of the jar and into the center of the blending vortex.  It also comes with a Spectacula, which is a specialized utensil with a contoured shape to fit inside the twister jar and scrape out every last bit.

Easy Broccoli Cheese Soup-
1 head of broccoli (about 4-5 cups chopped into florets)
2 cups chicken or vegetable stock (I used chicken because that is what I had on hand)
3 oz shredded cheddar cheese (reserve a bit to top the bowls of soup)
1 cup heavy cream (or milk to keep it lower in calories)
1/4 tsp kosher salt
1/8 tsp pepper
1/8 tsp ground nutmeg (optional)

Steam broccoli in microwave until tender and reserve 1 cup.  Put the remaining broccoli, stock, heavy cream (or milk), cheddar cheese (reserving a bit to top the bowls of soup), salt, pepper, and nutmeg into the Blendtec Blender.  Secure the lid and blend using the SOUP setting.  Chop remaining broccoli into desired size pieces depending on how smooth or chunky you like your soup.  Add broccoli to the blender and pulse at low speed for 1-2 seconds to mix the soup.  Pour into bowls and top with remaining cheese.  Enjoy!

3 & Go RECIPE: Sriracha Hummus – Quick Dish with Awesome Flavor

1 sm can of chic peas (garbanzo beans)
1 oz. Marukan Seasoned Gourmet Vinegar
3 Tbls Sriracha hot chili sauce

Some people like sweets.  My husband loves cookies, cake, ice cream and more.  I have to be in the mood for sweets but give me popcorn and I am a happy girl.  I’ve been known to skip dinner and eat a large popcorn at the movies (no butter though).  I was so excited when I was sent a selection of Kernel Season’s™ Popcorn Seasonings.  I was sent Bacon Cheddar, Garlic Parmesan, White Cheddar, Ranch, Nacho Cheddar, Butter, Caramel, and Kettle Corn flavors.  I love that they are made with natural ingredients like real cheese and real sugar.  The hard part was deciding which flavor to choose first.

I popped a bag of microwave popcorn and divided it up into several bowls so my family and I could try multiple flavors.  First we tried the White Cheddar.  It had a subtle cheddar flavor that wasn’t too strong and we all enjoyed it.  We have since sprinkled it on other things like vegetables and pasta.  I love that I can add flavor to other foods besides popcorn with Kernel Season’s™ Popcorn Seasonings.  We kicked it up a notch and tried the Nacho Cheddar next.  It had a stronger but equally as delicious taste as the White Cheddar.  It is also great to add nacho flavor to things like potatoes and pasta.  Putting Kernel Season’s™ Popcorn Seasonings on things my girls don’t normally eat like potatoes and veggie has helped me get them to try new foods.  My husband and I enjoyed the Bacon Cheddar flavor but it was a little too smokey/bacon-y (that’s a word, right?) for my girls.

My younger daughter is a HUGE ranch fan so she was very excited to see that Kernel Season’s™ made a ranch seasoning.  We all loved the Ranch flavor it brought to our popcorn and my little one liked it so much she has been asking to sprinkle it on other foods as well.  She ate a whole plate of broccoli with it!  Much better than dipping it in a ton of actual ranch dressing.  The Butter seasoning adds buttery flavor without loading our popcorn up with fat and calories- much healthier than regular butter.  If you like Italian food you will love the Garlic Parmesan seasoning.  It has just the right amount of garlic and in addition to being yummy on popcorn, it is great on pasta, veggies, and especially delicious sprinkled on buttered toast to make garlic bread.

For the sweet lovers Kernel Season’s™ doesn’t just stop at savory flavors.  They also make flavors to satisfy your sweet tooth, too.  We were sent Caramel and Kettle Corn flavors and both were sweet and delicious.  The Caramel adds the sweetness of caramel corn without the calories and sticky fingers.  We also loved the Kettle Corn flavor.  While I am a savory flavor lover, I do have a soft spot for Kettle Corn and Kernel Season’s™ Kettle Corn flavor hits the spot.

Kernel Season’s Popcorn Seasonings have an 18 month shelf life so I am now armed and ready to sprinkle some on everything from veggies to pancakes and potatoes to ice cream.  I love being able to add flavor without adding calories and fat.  Kernel Season’s Popcorn Seasonings at many local grocery stores or on their website.

My girls like the Sesame, Garlic Parmesan, and Original flavors while my husband prefers the “BOLD” flavors-  Chipolte Cheddar, Buffalo Wing, and Jalapeño Jack. I will say that the BOLD flavors aren’t that spicy so you don’t have to worry about that.  I think they have the perfect amount heat and kick but my father and husband who love spicy foods said they wished they were a little hotter.  Either way we all love Pretzel Crisps® and buy them all the time when we grocery shop now.  And for those that love sweets, they also have sweet varieties that are yummy, too.

Halloween is such a fun time of year.  I love decorating my house, helping my girls pick out costumes, and seeing the joy in all the children’s faces when they go trick or treating.  It is one of my favorite holidays.  That’s why I signed up to be a part of the Sweet Creations by Good Cook Haunted House Party Kit event.  I received several awesome items to create a Halloween themed party including a Hunted House Cookie Cutter Set, Hunted Cupcake Display, Halloween Cake Pops, and a Frankenstein cookie cutter.
My original plan was to make a gingerbread haunted house, Halloween cupcakes, Frankenstein cookies, and Halloween Cake Pops to bring to my daughter’s Girl Scout troop’s Halloween party.  Unfortunately my grandmother was in the hospital and so are plans changed and we weren’t able to bake everything or go to the party.  My grandmother is finally home thankfully and seems to be doing a little better.
We had already made the gingerbread cookie dough before I received the call to go to the hospital so once my grandmother came home I was able to finish the Haunted Gingerbread House with my girls.  I hope to still make the cupcakes and Halloween cake pops with them later this week.
I will admit that I was a little intimidated by the thought of making my own gingerbread cookie dough as I don’t normally bake, but the instructions on the Hunted House Cookie Cutter Set seemed easy enough so I figured I’d give it a try.  Several other bloggers had mentioned that they didn’t have enough dough when they followed the recipe on the box so I doubled it and had extra dough which was great because then my girls were able to use the Frankenstein cookie cutter to make some cookies plus they used some dough to make their own free form creations.  The dough was very easy to make following the directions and the final product was yummy.
We rolled out the dough on several pieces of parchment paper using a rolling pin and a piece of parchment on top of the dough to keep it smooth.  We found that it is much easier to just move the whole bottom sheet of parchment paper onto a cookie sheet then to roll and cut out the cookies and then try to move each of them onto a new piece of parchment on a cookie sheet.  Once the dough was about 1/8 of an inch think we used the cookie cutters that came with the kit to create 4 roof pieces, 2 side walls, the front wall, and the back wall.  My girls had fun turning the cookie cutters over to stamp each wall with different designs and then use the roller to stamp on bats and spiders.

Once the gingerbread cookie house panels cooled I still felt that they were a little too soft and spongy (I probably made them a little too thick so they didn’t crisp up enough).  I melted some chocolate and painted the inside pieces of the house to give them strength when one of the pieces cracked down the middle but that was totally my fault for handling them before they were totally cooled.  If done correctly you should be able to let the pieces cool and then assemble them without the chocolate as support.
Once all of the walls were firm we decorated them with icing, candy, etc.  I put icing into the corner of plastic baggies for my girls and snipped the ends to make easy piping bags.

The box says to use royal icing to assemble the house.  I didn’t have royal icing so I used decorator’s icing because it hardens similar to royal icing.  While it did hold the house together, I don’t think it was as firm as royal icing would have been unfortunately.  Live and learn!  I was able to assemble the house and take some pictures but before I had the chance to smooth the icing a little to perfect it and let my girls create a candy scene around the gingerbread house, it fell apart and the front wall broke.  My girls and I had so much fun working together and it was a great learning experience for all of us.  I think the Hunted House Cookie Cutter Set is easy to use if you have a little baking experience.  It just takes some patience and a lot of royal icing to hold it all together.

With the extra gingerbread dough we had made, my girls had fun making cookies and decorating them, too!

Girl Scout Cookie Coffee-mate
If you like Girl Scout Cookies, you have to try Coffee-mate’s 2 new Girl Scout Cookie flavored creamers- Thin Mint and Caramel & Coconut (like Samoas, my favorite Girl Scout Cookies).  I tried them both a few months ago when I went to BlogHer in Chicago and I have been searching for them at my local grocery store ever since.  Then a weeks ago my family and I went to a local museum and Coffee-mate was there sampling these two yummy flavors and I was hooked again.  Actually this time my whole family was hooked.  The Thin Mint tastes just like a Girl Scout Thin Mint Cookie which both of my girls love and the Caramel & Coconut tastes just like a Girl Scout Samoa cookie, my favorite!  I don’t let my girls drink coffee.  We’re already short enough.  No need to stunt their growth by drinking coffee.  Maybe that is why I am hardly 5 feet myself!  I found that I can mix a little of the Coffee-mate with milk and create a yummy flavored milk.  Or for a more indulgent treat it can be used to make a milkshake.

When a representative from Coffee-mate contacted me to review the Girl Scout Cookie flavored creamers I jumped at the chance just to get my hands on more since I still haven’t been able to find it locally.  Two bottles of each flavor were dropped off yesterday morning and I am *almost* too embarrassed to admit that my family has almost gone through one entire bottle of the Caramel & Coconut flavor.  It is THAT good.

Hubby and I each had a few cups of coffee in the last 2 days with the Caramel & Coconut flavor and my younger daughter had me make her flavored milk with it.  My older daughter is camping this weekend ironically with her Girl Scout troop so we’ll have to save her some.

To make Girl Scout Cookie flavored milk I added about an ounce of Coffee-mate Caramel & Coconut flavored creamer, 2 cups of milk, and some ice and shook them together in my blender ball cup.
It was really yummy but then I decided to kick it up a notch and add a tablespoon of chocolate syrup.  It was AMAZING!  Next time I make it I am going to put some vanilla ice cream in it and turn it into a milkshake.  samoa milk
The creamers are really flavorful, rich, and creamy so they make coffee, milkshakes, and more feel like an indulgent dessert.  Now that we’ve almost gone through a whole bottle, I’ll have to hide it so it will last longer!

If you are craving steak, Longhorn Steakhouse has a great deal for you.  From now until October 20th you can get a 3 course steak dinner for only $12.99.  Each meal comes with unlimited warm honey wheat bread to start.  We then got to choose from a hand-chopped mixed green salad with our choice of dressing or a Caesar salad.  Hubby and I both chose mixed green salads.  They were very fresh, crispy, and cold and we really enjoyed them.

My daughters decided that they wanted to share an appetizer (not included with the steak 3 course meal) so we ordered the soft pretzel sticks with honey mustard and beer cheese dipping sauces.  My hubby and I both really liked the two sauces but my girls just liked the pretzels.  The beer cheese was too strong for them and they don’t like honey mustard.  If we order them again I will probably ask for ranch or another dipping sauce for my girls.
For our main course this special came with a 6 oz. Renegade Sirloin.  You can upgrade to an 8 oz.  Renegade Sirloin for an additional $3.00 or the 7 oz. Flo’s Filet for an additional $7.00.  I choose the 6 oz. Renegade Sirloin but added sauteed onions and mushrooms for a small charge.  My husband choose the 8 oz. Renegade Sirloin and ended up with leftovers.  He also chose to have his steak crusted with bleu cheese for a small charge.  We both ordered our steaks medium and they were cooked perfectly.  They were soft, tender, and delicious.  I am picky when it comes to steak and I hate having to cut away fat.  There was no fat on either of our steaks.  I had planned on taking some home for leftovers but it was just too good that I ended up finishing all of my steak.  My husband really enjoyed his bleu cheese crusted steak and since he ordered the large portion he ended up with leftovers for lunch tomorrow.
Once we picked our steaks, we got to choose a side.  The 7 side choices were a loaded baked potato, a sweet potato with cinnamon sugar and butter, a fresh vegetable medley, fresh green beans, seasoned french fries, seasoned rice pilaf, or mashed potatoes.  For an additional $1.59 we could choose a signature side- brussel sprouts au gratin (roasted brussel sprouts and bacon in a four cheese cream sauce topped with provolone, and Parmesan breadcrumbs), fresh steamed asparagus (drizzled with lemon sauce), or steakhouse mac and cheese (corkscrew pasta, four cheeses, and bacon).  I chose the steakhouse mac and cheese and hubby had a loaded baked potato.  He said the baked potato was soft and delicious.  I LOVED the steakhouse mac and cheese.  It was creamy and cheese with a subtle garlic flavor and of course bacon.  It is mac and cheese for grown ups.
For dessert we had a choice of Cinnamon Sugar Dough Bites or a Peanut Butter Cup Sundae.  Since we both ordered the steak dinner we decided to order one of each dessert and we all shared.  The Cinnamon Sugar Dough Bites were covered in cinnamon sugar and then drizzled in syrup (I think it was raspberry).  They were warm and delicious and the syrup really made them extra sweet and yummy.  The Peanut Butter Cup Sundae was equally delicious.  It had vanilla ice cream, chocolate syrup, crumbled peanut butter cups, and whipped cream.  As full as we were from our meal, we all enjoyed both desserts.longhorn steakhouse children's menu
Let’s not forget the kids!  There are 8 meal choices on the children’s menu.  My girls each picked a meal but then also wanted mac and cheese.  Luckily instead of french fries or broccoli, they were both able to add mac and cheese as their side for a small fee.  That made everyone happy.  One of my girls ordered a cheeseburger and the other ordered chicken tenders.  Both looked really good and my girls enjoyed their dinners.  I really like how Longhorn Steakhouse gives adults cloth napkins with their silverware inside but children receive a fork and a package of crayons wrapped inside a paper napkin which is more kid friendly for my children who tend to get messy.  They also gave my girls cups with lids so they wouldn’t spill their drinks.  It was as if Longhorn Steakhouse has dined with us before and knows what messes my girls are capable of.  Seriously though, the staff was friendly, the food was great, and we all enjoyed our meals.  The $12.99 3-course steak dinner is a great value so head over to Longhorn Steakhouse before October 20th!

When I was selected by Gorton’s to participate in the Wicked Good Seafood campaign I knew right away what recipe I would be making- Fish Tacos.  Gorton’s also has lots of great fish recipes on their site if you need other inspiration.  For my recipe I selected their Beer Battered Fish Fillets but many of their other breaded fish varieties would have worked well, too, such as Crunchy Breaded Tenders, Potato Crunch Fish Fillets, and even a kid-friendly favorite—Fish Sticks!  I love Gorton’s fish because no matter what variety I buy, it is always crispy on the outside and tender and flaky on the inside.  They have something for everyone in my family.  My hubby and I like making fish tacos but our girls prefer fish sticks or even a fish sandwich.  With Gorton’s I can make different types of their fish at the same time and make everyone in my family happy.  That makes Mommy happy, too!

Fish tacos are really simple with Gorton’s Crispy Battered Fish.
Gorton’s Crispy Battered Fish- 1 piece per taco
Tortilla- flour or corn depending on your preference, 1 per taco
Coleslaw mix- shredded cabbage and carrots
Shredded cheddar cheese
Tarter Sauce
Avocado- optional1. Cook fish according to package directions.
2. Spread tarter sauce on tortilla.
3. Spread desired amount of coleslaw mix on tortilla.
4. Top with fish, shredded cheese, and avocado (if desired).
5. Add more tarter sauce (if desired).
6. Enjoy!
See, I told you that was easy!  No tarter sauce on hand?  Mix mayonnaise and relish to taste and use in place of tarter sauce.  If you don’t like tarter sauce you can use ranch dressing or other dipping sauces instead.

Finding yummy AND healthy snacks for my children’s lunches and after school snacks is often a challenge.  The snacks they want are usually yummy but unhealthy.  They are full of fat, artificial colors, artificial flavors, and a ton of other junk that just isn’t healthy.  Yummy Health is trying to change that with a line of Yummy Snacks that are healthy, too.

We were sent YummySnack Chocolate Blast Bars and YummySnack Chips.  The YummySnack Chips come in 3 kid friendly flavors- Nacho, Pizza, and Cheddar.  They are made entirely of real Wisconsin cheese and all natural seasonings.  Each serving contains 5 grams of protein and 16% of the RDA of calcium.  What you don’t get are hydrogenated oils, trans fats, gluten, or artificial colors, flavors, and preservatives.  They are a great lunchbox replacement for potato chips.  My kids both enjoyed all the flavors of YummySnack Chips but their favorite was Cheddar.  They have a great crunchy texture.  I found them a little too salty for my taste and yet I found myself craving them later so I think they grew on me.  If your kids like cheesy snacks, they’ll love these.

The YummySnack Chocolate Blast Bars are a delicious chocolate-coated “better-than-candy” bar that is made with real incredients like cocoa, coconut, almond butter, and flax seed.  They provide a whopping 8 grams of fiber, 100 mg of Omega 3s, and only 8 grams of sugar.  That is amazing compared to most candy bars that have more than 20 grams of sugar.  Sure those numbers sound great but if it doesn’t taste good then it doesn’t matter, does it?  But that’s the great thing about the YummySnack Chocolate Blast Bars.  They are absolutely delicious.  You can definitely taste the coconut so if you or your kids aren’t coconut fans then they might not be for you.  But my younger daughter and I both love coconut so we found the bars absolutely scrumptious.  I could eat them every day and since they are lower on sugar and fat than a regular candy bar, I really could!
I like that with YummySnacks I don’t have to fight with my kids to eat healthier snacks.  They are something we can all agree on so making YummySwaps is easy with YummySnacks.
