Spring is such a fun time of year.  All the bunnies, chicks, butterflies, and spring colors are so pretty and great to bring a festive cheer to anyone.  I was sent a Spring Silicone Bark and Chocolate Mold from Good Cook and was so excited to get to work on creating a fun treat for my family and friends.  The mold is heat safe so you can create fun brownies, cookies, etc. in it but I decided to make some chocolate bark this time.

The mold is super cute and makes such darling spring designs in whatever you make with it.  It is very flexible and everything easily slips right out of it.  I was afraid my creations would stick to it, fall apart, or lose some of the design but that wasn’t the case.  The silicone makes it so easy to pull the mold off whatever you make.

I made two batches because I didn’t like how the designs on the first batch came out but that was my own mistake.  I covered the whole bottom of each mold section with white melting chocolate and then created my bark varieties on top.  Then when it all cooled I took the bark out of the mold AND SHOULD HAVE STOPPED THERE.  But I wanted to color in the various indented sections of the bark that the mold created.  I should have left them alone or perhaps used a food safe paintbrush to color the designs with the colored chocolate.  I tried to use a pastry type bags filled with various colors of melting chocolate to fill in the colors but I didn’t like how it turned out.   I think I am just a hard judge on myself because I wanted them to be perfect because my younger daughter saw them and said I was the “Most Talented Mommy Ever”!

See what I mean with the 1st attempt above.  It could have been better but the lumpy designs were my fault.  That’s when I figured out to either not fill in the designs because they are so cute not being colored in or by filling them with the method pictured below.

First fill in the first “level” of the mold around the designs with one color of chocolate using a pastry bag with the end snipped off.

Then fill in the designs with your desired colors of chocolate using pastry bags.

Cover with your choice of chocolate colors/flavors.  I used dark chocolate on half of the mold above and white chocolate mixed with yellow cake mix.

YES I SAID CAKE MIX!!!  
It makes a delicious cake tasting chocolate.  I mixed about 1 cup of white chocolate with 2 tsp of dry yellow cake mix.
Top with desired toppings (in my second batch above I used jelly beans on one side and M&M eggs on the other), let cool, and viola!

See how much prettier the second batch’s designs came out?  They were so easy to break apart, too.

These adorable bark squares would make a great gift for friends, relatives, or a special teacher.  Sure the jelly beans and M&Ms are adorable and yummy but if you want to kick it up a notch try one of the other combinations that I created in my 1st chocolate bark attempt.

There are so many yummy things you can make with the Good Cook Popcorn Ballers.  I made Caramel Turtle Popcorn Balls for my official Good Cook Popcorn Ball event post but I decided to also make S’Mores Popcorn Balls, too.  Both flavors came out really delicious and were very easy to make.  The popcorn baller really helped to make the popcorn balls round and even sized.

Ingredients-

  • 16 cups popcorn (I popped it in a pot on the stove but you can choose any method you prefer)
  • 1 10 oz. bag miniature marshmallows
  • 1/2 c. butter
  • 2 cups milk chocolate chips- divided 1 1/2 cups and 1/2 cups
  • 2 cups Golden Grahams cereal
  • 1 T. butter for your fingers (optional)

Directions-

~Pop popcorn any method you prefer.  I prefer popping it in a pot on the stove for this particular recipe.

~ Melt butter and marshmallows in a medium pot over medium head stirring frequently.  When the marshmallows are almost fully melted, remove pot from burner and stir to fully melt the marshmallows.  Pour half of the marshmallow mixture over the popcorn and fold gently to coat.  Pour the rest of the marshmallow mixture over the popcorn and fold again until completely coated.

~Fold in Golden Grahams cereal and 1 1/2 cups of chocolate chips until combined.  Allow to cool for a few minutes and fold in remaining chocolate chips so some retain their shape.

~Spray popcorn baller with a light coat of non-stick cooking spray.  Fill baller with popcorn mixture in a heaping mound.  (You might prefer to butter your fingers to fill the baller and remove the popcorn ball from the mold.)

~Place top on baller and press down until ball is formed.  Remove top of baller, take popcorn ball out of mold and place on waxed paper/parchment to cool and harden.  Enjoy!  (Store in airtight container or wrap individually in cellophane bag to give as gifts.)

When I was selected to be part of Good Cook’s Popcorn Ballers event I had so many ideas of what flavors to make that I decided to make two different recipes- S’More Popcorn Balls and Caramel Turtle Popcorn Balls.  I had never made popcorn balls before but with the Good Cook Popcorn Baller it was really easy.  The baller made the popcorn balls round and even sized.  Good Cook also sent me other great items to help with the recipes including 2 bowls, a spatula, a candy thermometer, and a sauce pan.  You can find them all on the Good Cook website.good cook popcorn ball supplies

Ingredients-

  • 14 cups popcorn (I popped it in a pot on the stove but you can choose any method you prefer)
  • 2 cups carmamel squares
  • 1 Tablespoon water
  • 1 Tablespoon butter
  • 2 cups semi-sweet chocolate chips
  • 1 cup pecans (whole or chopped)
  • 1 T. butter for your fingers (optional)

Directions-

SushiQuik At-Home Sushi Making Kit Product Review and Giveaway

My husband and I love sushi but we have always been too intimidated to make it at home.  Sushi can get expensive so it is a treat when we go out for sushi.  We’ve tried sushi from the local grocery store but it just isn’t the same.  I recently found out about SushiQuik sushi making kit and I knew I had to try it.  I bought all the ingredients that I needed, made the rice according to the package directions, and then realized that I forgot to buy nori (the seaweed wrappers).  I didn’t have anything else to use to wrap the sushi so I had to give up my idea for a sushi lunch that day.  DOH!  Make sure you have all the supplies you need to make sushi BEFORE you make your rice!

The next time I went to the grocery store I purchased nori and was ready to make my sushi.  I put sushi rice in my rice cooker and cooked it according to the directions.  While the rice was cooking I assembled my ingredients.  What is great about making sushi is that you can fill it with whatever ingredients you want.  I was making several different types of rolls so I had carrots, avocado, cream cheese, imitation crab meat, and shrimp tempura.  I cut my ingredients into smaller pieces so they would fit inside my rolls.  If you have pieces of filling that are too big, your roll will not stay together.  When the rice finished cooking I stirred in a tablespoon of rice wine vinegar and I was ready to start rolling.

It is so easy to roll sushi with the SushiQuik sushi making kit.  First lay the white mat out on top of the black stand.  There is a tab on the bottom of the mat that fits into a slot on the stand so it stays in place.  Place a piece of nori flat on the white mat and cover it with the frame making sure that you can see the nori through the slit on the top of the frame.  Using the rice paddle, place rice on top of the nori and spread it to cover the entire surface of the inside of the frame.  Make sure it is the same height of the frame and not higher.  I kept a cup of water next to me and found it easier to dip my fingers in the water and use them to press the rice down and spread it out to fit inside the frame.  Some people might prefer to only use the rice paddle.  The choice is yours.  Make sure there is no rice across the end of the nori that is furthest from you.  Remove the frame and you are ready to add your ingredients across your nori about 1/4 of the way down the area of the rice.  Do not over stuff or your roll will be too thick.  When you have all your ingredients on your rice, dip your fingers into the water and moisten the nori on the end opposite you.  Now start rolling the sushi from the bottom end that is closer to you.  Continue rolling up the mat with your sushi inside until you reach the end making sure to tighten the roll as you go.  When you get to the end, wrap the moistened end around your roll to seal it.  Place your roll on a cutting board and put the cutting guide over it.  Use the cutting guide to easily cut your sushi into equal pieces.  You can use the end caps from the roller as dipping sauce cups for soy sauce, eel sauce, or whatever you like to dip your sushi in.  Feel free to experiment with different fillings and different sauces.  The options are limitless.  My husband was surprise when he came home and tried the sushi I had made.  He thought it had come from a restaurant and said he will never buy sushi from the grocery store again.

I created 2 different varieties of sushi and I already have ideas for the next time.  This time I made one roll with imitation crab meat, cream cheese, avocado, and carrots and the second roll had shrimp tempura, cream cheese, avocado, and carrots.  I was really amazed how easy the SushiQuik was to use.  Both my girls (7 and 9 years old) were able to make rolls themselves with supervision.  I love how the SushiQuik kit rolls up for easy storage, too, which is important because space in my kitchen is so limited.  If you love sushi, try making it yourself at home with the SushiQuik.  It would make a great holiday gift for any sushi lover, too.

As a member of the Good Cook bloggers I took part in the Stuffed Burger competition and received a cast iron grill as part of the stuffed burger kit to create my recipe.  I have always wanted a grill pan so I was excited to be a part of this event.  Now that I have a grill pan I was even more excited when the next event was announced- BACON!  Who doesn’t love bacon, right?  I received a Good Cook Bacon Press to use with my cast iron grill pan to create my bacon masterpiece.  Bacon presses are great to keep bacon flat while cooking so it doesn’t curl up but they are also great for making a panini sandwich, flat iron steak, and lots more.  Keep any eye out for more recipes featuring my grill pan and grill press coming soon.

For my bacon recipe I tried to come up with something different.  I love a good BLT sandwich but that seemed too obvious.   I considered making a breakfast sandwich with bacon but again that didn’t seem creative enough.  That’s when I decided to make two different desserts with bacon- Chocolate Covered Bacon and a Maple Bacon Milkshake.  These recipes aren’t for the faint of heart but a true bacon lover will appreciate the sweet and smokey flavors in these recipes.  Enjoy!

Chocolate Covered Bacon

Ingredients:
1/2 pound of bacon
1 cup dark chocolate
1 cup milk chocolate
1/2 cup white chocolate

Cook bacon in grill pan with grill press.  Keep flipping until done on each side.
(Try not to set off the smoke alarm like I did.  True story!  I set my smoke alarm off tonight cooking bacon!)
Drain bacon on paper towel and allow bacon to cool.
Cover a cookie sheet with parchment paper or aluminum foil.
Melt chocolate over a double boiler or in a bowl in the microwave for about 1 minute 15 seconds at 70% power.  Stir until smooth.
Dip each piece of bacon in chocolate until completely covered.  Allow excess to drip back into bowl.
Place chocolate covered bacon on covered cookie sheet.
Dip fork into white chocolate and drizzle over already dipped bacon pieces.
Cool in refrigerator until chocolate is hardened.
Store in refrigerator.

Chocolate Covered Bacon

Maple Bacon Milkshake

Ingredients:
(Makes 2 servings)
4 slices of bacon
1/2 cup brown sugar
4 Tablespoons REAL Maple Syrup
4 cups Vanilla ice cream
1 cup of milk

Spread brown sugar on a plate and dip each piece of bacon in it covering all sides.
Cook bacon in grill pan with grill press.  Keep flipping until done on each side.
NOTE~ The bacon will not get quite as crispy as regular bacon because it will have a candied glaze from the caramelized brown sugar.
Drain on paper towel and set bacon aside to cool.
When bacon is cooled, cut it into small pieces using kitchen shears.
Reserve enough bacon to crumble on the top of each milkshake to garnish.
In blender blend ice cream, milk, maple syrup, and bacon pieces until well blended.
Pour maple syrup down sides of 2 glasses and swirl around for garnish if desired.
Pour milkshake into 2 glasses.
Garnish with reserved bacon crumbles.
Enjoy right away!

When I was invited to the Good Cook Stuffed Burger Challenge the first thing that popped into my head was French Onion Soup.  I know that is a weird thing to think about when given a burger challenge but I figured I’d give it a try and I am glad I did.  It came out AMAZING.  The cheese and onions inside combined into creamy cheese once inside the burger, the Gruyere on top got nice and crispy under the broiler like it does on French Onion Soup, and then Muenster Cheese on top was nice and gooey!  It was an amazing flavor combination and I am so excited to share it with my readers.Stuffed French Onion Burger

For this recipe I used the Good Cook knife and cutting board to slice the onions, the Good Cook standing grater to shred the Gruyere cheese (note- freeze the cheese for 10 minutes prior to shredding to make it easier), and the Good Cook Burger Stuffer, turner, and Cast Iron Grill Pan to make the burgers.  I love that the burger press makes it easy to create a “pocket” in the burger to stuff it.

Stuffed French Onion Burger- 2 servings

Ingredients:
1 pound ground beef
2 tablespoons Worcestershire sauce
4 tablespoons of Extra Virgin Olive Oil
1 tablespoon butter or margarine
2 yellow onions (sliced)
1 can beef broth
2 teaspoons poultry seasoning
1 garlic clove (chopped/pressed)
2 slices Muenster Cheese
1/3 pound Gruyere Cheese (shredded)
2 French Rolls

Directions:
Melt butter and 2 tablespoons olive oil in medium high skillet.
Add sliced onions and saute until browned (approx. 35 minutes).
Add beef broth, garlic, and poultry seasoning to skillet and simmer for 5 minutes.
Reserve liquid and set aside for onions to cool.
Mix ground beef with Worcestershire sauce.
Put about 1/4 pound of ground beef mixture in the Good Cook stuffed burger press and press to form a well for filling.
Layer about a tablespoon of shredded Gruyere cheese, about a tablespoon of onions, and then a second layer of shredded Gruyere cheese.
Top with about 1/4 pound of ground beef mixture and use top of burger press to press and seal the burger.
Grill until desired temperature.  Meanwhile warm up left over onions.
Top with shredded Gruyere cheese and broil until golden brown.
Top with onions and a slice of Muenster cheese.
Place burger in still warm oven to melt (but not brown) cheese.
Toast French rolls and drizzle with olive oil and reserved broth from onions.
Top roll with burger and enjoy!

Hi, my name is Cori and I’m a cheese-a-holic!  Ok, I might not be THAT bad but I do love cheese.  I would usually turn down dessert for cheese.  I have turned my girls on to my cheese obsession, too.  I always say that I don’t have daughters, I have mice.  We like to go to our local cheese shop to purchase pieces of a few different types of  gourmet cheeses and a nice, warm baguette.  We then sit outside and enjoy our yummy snack.  When I was at the BlogHer convention last month I discovered a wonderful brand of gourmet cheese, Sartori and I knew I had to do a review post on their delicious cheeses.
Sartori is a family owned company that has been making  artisan cheeses since 1939.  They make 3 different varieties of cheeses- Sartori Reserve, Sartori Classic, and Sartori Limited Edition.  All 3 cheese varieties are all certified rBST-free thanks to their patron farmers.  That means that all of their cheese sold at retail are free of added hormones.  As a mom, that is important to me.

sartori cheese varietiesSartori makes many different varieties of cheeses that can be found at many local grocery stores or ordered on their website.  I received Rosemary and Olive Oil Asiago, Chai BellaVitano, Espresso BellaVitano, Montamore, and Extra Aged Fontina cheese to try with my family.  My favorite is the Espresso BellaVitano.  It is hand-rubbed with freshly roasted espresso and the cheese itself is sweet and creamy.  My younger daughter’s favorite is the award winning Rosemary and Olive Oil Asiago cheese.  It has a nutty flavor while the Rosemary and Olive Oil that is hand-rubbed on the outside gives it a savory note, too.  My older daughter’s favorite was the Montamore because it is sweet and creamy.  But let’s not forget the Chai BellaVitano and the Extra Aged Fontina.  The Chai BellaVitano is deliciously exotic with the spiciness of the Chai that is hand-rubbed on the outside of the sweet and creamy BellaVitano.  And the Extra Aged Fontina is another wonderfully delicious cheese by Sartori.  It is creamy with a deep, rich flavor and pairs well with fruits and nuts.  I put it on a baguette with some wet walnuts and it was amazing!

I love that Satori’s cheeses are made fresh using milk from local dairies.  It goes from milk to cheese in a matter of hours.  How’s that for fresh?!?!  They have a regimented milk quality program to ensure the freshest, highest quality milk available.  Many farms have been with Sartori for generations.  It’s not just the cheese that I love about Sartori, it’s the stories behind the company and it’s cheeses.  Sartori knows cheese.  There are currently only 55 Master Cheesemakers which requires a minimum of 10 years as a cheesemaker to even enter the 3 year advanced education program.  Sartori has 4 of those 55 Master Cheesemakers on staff.  In the last 5 years Sartori has won over 140 awards in the most prestigious national and international cheese competitions and after tasting their cheeses I can see why!

You probably already know that I am part of the Good Cook Blogger program.  I’ve already done several fun campaigns such as the produce keepers and the sandwich campaign.  I was so excited when an avocado campaign was announced.  I love avocado!  My original plan was to make sushi for my avocado recipe.  Only one problem……I’ve never made sushi before and I am not really sure how to make it.  I love eating and I’ve always wanted learn how to make it so I figured this was a great chance.  I reached out the the SushiQuik company to review one of their easy sushi makers to help me make my avocado sushi.  They were gracious enough to send me one to review but I ran out of time and needed to get my avocado recipe post up so I decided on a different recipe for this avocado campaign.  Keep an eye out of my review of the SushiQuik sushi maker coming soon.
Easy Avocado Fries
I made a really delicious chicken cordon bleu the other day that my husband loved.  I was trying to think of a recipe to use avocados with and remembered the breading I had used for the chicken and BINGO Easy Avocado Fries was born.  What I love about this recipe is that the outside of the avocado has a nice, crispy coating but the inside has soft, cream….almost buttery avocado.  This recipe is very easy and only takes a few minutes.

1 medium avocado
2/3 cup regular bread crumbs
1 egg
1 Tablespoon Mrs. Dash Garlic and Herb Blend (or any other herb blend)
olive oil (a few tablespoons to cook in)

  1. Remove pit and slice avocado with Good Cook Avocado Slicer (your avocado should be ripe but still firm)
  2. Heat olive oil in skillet to medium high heat
  3. Beat egg lightly in small bowl
  4. Mix breadcrumbs and seasoning in separate small bowl
  5. Dip avocado slice in egg
  6. Dip avocado slice in breadcrumb mix until fully covered
  7. Place avocado slice in skillet and cook for several minutes on first side until golden brown
  8. Flip avocado and cook on second side until both sides are golden brown
  9. Cover plate with a layer of paper towels
  10. Once fully cooked drain avocado on paper towels and serve warm

Note~ I thought that the avocado fries were great by themselves but you could serve with a dipping sauce such as ranch dressing if desired.
