marukan I love cooking with Asian flavors so I was excited to try Marukan’s rice vinegars and ponzu sauce.  I use rice vinegar when I am making rice for sushi.  Marukan’s Seasoned Gourmet Rice Vinegar is great for adding a little something extra when making sushi.  It is also a great base for making vinaigrette dressings.  I add it to a little extra virgin olive oil, some orange juice, and some fresh herbs for a light citrus dressing.  I had some asparagus that I didn’t know what to do with so I decided to create an Asian inspired side dish.  I sauteed the asparagus in some extra virgin olive oil, 1/4 cup of Marukan Ponzu Sauce, 1 packet of Stevia for sweetness, and a Tablespoon of Marukan Seasoned Gourmet Rice Vinegar.  It came out tender and delicious.

When I am not on the computer I am normally cooking or baking since it is my favorite thing to do.  I love to try out new recipes, but my issue lately is that I am either lugging my 18 inch laptop into the kitchen or my phone so I can try follow the steps for the recipe and simply it becomes a pain.  So I had been thinking of getting a tablet just to use in the kitchen but nothing had been what I wanted till Key Ingredient Recipe Reader emailed me.  I checked out out and right away I knew this is what I had been looking for.  So I said yes to doing a review of the product and  as soon as they told me it has shipped I signed up for Key Ingredient and even got the app for my phone.  So before the reader even got to my house I had over 40 new recipes added and I was excited.  After charging the Recipe Reader I simple turned on and logged into my account and with the wifi built in it synced my accounts together so I had all  my recipes on my Recipe Reader.  I loved the key ingredient website because it has tons of recipes to pick from and I could make cookbook folders for each section I liked, example crockpot, chicken, breakfast and more.   Each folder you make will list the recipes in alphabetic order so you can easily find if you know the name of the recipe you are looking for.  If you are planning a holiday meal this year and you find recipes you only want for the meal you can dd them to your planner, so you can easily find them when it time to cook for that meal.   The Key Ingredient has 3 timers so you can be cooking and baking many meals at once and keep up with each one.   The back has a stand so that is up some so it is easier to view, you can use laying flat or standing up it will rotate for you.

A few other great things you will love about the Key Ingredient is that it comes with a conversion calculator and a ingredient substitute which honestly makes life so much easier.  Since I hate when I don’t have something then I have to turn on my computer and then find what I can use but then I get distracted from my computer.   Also this would be a great gift for an older person who is not tech savvy since it is simple to use.  You can also have the font sized changed so you can see without straining.  Oh and don’t worry if you spill something on it all you have to do is wipe off it is sealed glass.

So my personal thoughts-

I am in love, I would buy this for anyone who loves to cook.  It makes my life simple and easy.  I don’t have to drag my laptop, cookbook or more into my small kitchen.  I just use the Key Ingredient website or app on my phone once a week find some recipes I like and add them to my planner so I write out my meal plan for the week they are right in front of me.   I love that I can use either standing up or laying down and be able to view it without any problem.   So now I know what I am getting some family members for Christmas now that I tried this out.  If you want to buy a Key Ingredient Recipe Reader they are $149 with free shipping.

Fagor Chef Line Pressure Cooker Review

I’ve always wanted to try cooking with a pressure cooker but I’ve been afraid.  I know that the pressure cookers of the past have been dangerous but I had several friends tell me how much they loved their Fagor Pressure Cookers and how safe they are.  I was sent Fagor’s 8 quart Chef Line Pressure Cooker to review and I am hooked.  It is so easy to use and has THREE security valves.  It automatically locks the lid while pressure is still inside and if the lid is not closed properly, the unit will not create any additional pressure.  That really makes me so comfortable using it and not worrying about getting burned.

The Chef Pressure Cooker is constructed with 18/10 Stainless Steel.  It has a pressure indicator with 2 distinct positions so you can choose how much pressure you need according to your recipe.   The 1st indicates LOW pressure (8 psi) and the 2nd indicates HIGH pressure (15 psi).  As the pressure builds in the unit the pressure indicator rises.  When you see one black bar it means that the pressure is low and then when it rises to 2 black bars the pressure is high.  I love that it has short side handles so it doesn’t crowd my stove.  Especially during holiday meals my stove gets so crowded with so many pots and pans so it is nice that the Fagor Chef Pressure Cooker don’t take up much more space than the burner itself.  Plus that means there are no long handles to accidentally bump into.  Another great feature is the included removable timer/alarm.  It is especially handy when cooking several different dishes and you need an extra timer on hand.   The MAX Line Indicator lets you know the filling capacity of your pressure cooker.

Cooking pot roast in the Fagor Chef Pressure Cooker was easy.  I put a little oil in the bottom of the pot and seared the roast on all sides.  I then followed the instructions on the recipe that I used that included sprinkling on some seasonings and pouring in some beef broth.  I added some cut up potatoes and baby carrots and I was ready to cook.  I closed the lid, set the valve to high pressure, and turned the burner on.  As the pressure built inside the pressure cooker the indicator rose.  When it reached high pressure and I was able to see 2 black bars I lowered the burner temperature and let my roast cook for 45 minutes.  When time was up I let it cool for a bit and then slowly and carefully released the pressure with the pressure valve.  It was so easy, took much less time than any other cooking method, and the meat was so tender we hardly needed to use our knives.  When dinner was over, cleaning the pressure cooker was easy, too.  The Fagor Chef Pressure Cooker is really going to save this busy mom lots of time in the kitchen.  The unit comes with a DVD of recipes and there are also lots of great recipes on Fagor’s website.  I am amazed at all the reduced cooking times you can achieve with the Fagor Chef Pressure Cooker and I can’t wait to try more recipes.  What should I make next?  Chicken?  Soup?  Fish?  Veggies?

When Life Hands You Lemon Keepers, Make…… #goodcookcom #goodcookkitchenexprt

I am part of the GoodCook Kitchen Experts Blogger program and they challenged us to come up with creative and unique ways to use their Lemon Keeper.  I am always up for a fun challenge so here are some creative ways to use a GoodCook Lemon Keeper.  
piggyPiggy Bank– Drill a hole in the pointed end of the lemon keeper.  I used a nail and a hammer to make a hole because my husband wasn’t sure where his drill was.  Paint both sides pink and allow to dry.  Paint the inside of the clear side pink and allow to dry.  Paint 5 water bottle tops for the legs and nose and allow to dry.  Once all the pieces are dry, put both halves together.  Use a glue gun to glue the water bottle tops onto the bottom of the piggy for the legs and one on the flat part for the nose.  Add on googly eyes.  Twist up a pink pipe cleaner and push one end through the hole in the pointed side of the lemon.  Cut out ears on pink material, pink paper, or pink felt.  We had a wide pink ribbon so that’s what I used.  Glue ears on the top of the piggy.  To add money just twist piggy open.  If you want to make a slit on the top, carefully drill a slit across the top prior to painting.  Again, my husband’s drill is MIA so no hole in our piggy!

Butter Churn– Pour heavy whipping cream into the top of the lemon keeper.  Twist on the bottom and shake, shake, shake until butter forms and separates from the buttermilk.  This is a fun activity for children to do.  Add salt to taste if you want.  You can even add herbs and make your own herb butter.
butterAcorn– My daughter used a lemon keeper as an acorn for a prop in her class play.
acornDip Chiller- Place crushed ice in the bottom, put the top upside-down in the bottom, and fill with your favorite dip to keep it cold.  Great for parties, taco night, and any time you want to keep dips and toppings cold.

Here are a few more ideas:
Q-Tip holder– Put Q-tips in the lemon keeper to keep them clean and dry in the bathroom.
Office supplies holder– You can store push pins, paper clips, rubber bands and more inside a lemon keeper.
Baking soda in the fridge and freezer– this one requires a little “work”.  Use a drill to carefully drill several holes into the top of the lemon keeper.  Add baking soda to the bottom, screw on top, and place into your fridge and freezer to keep it smelling fresh.
Snacks for the kids lunch boxes– Put various snacks in the lemon keeper for a fun snack holder in your child’s lunch.
Hard boiled egg storage in lunchboxes– The lemon keeper makes a great container to keep hard boiled eggs in without getting crushed.
Music makers– Fill the lemon keeper with dried rice or beans for fun music makers for children.  Vary the bean type and see what sounds each type makes.

Mrs Bernstein SandwichAs a Good Cook blogger I was asked to share a favorite sandwich recipe.  I wanted my recipe to be meaningful so I knew right away what it would be.  When I was in middle school the mother of one of my good friends used to make the most delicious Italian sandwiches.  She knew how much I loved them so every once in a while when she was making one for her daughter, she would make one for me, too.  Now all these years later (I won’t tell you how many years!), I still have such wonderful memories of Mrs. Bernstein’s kindness and her yummy sandwiches.  It’s been a long time since I had one of her sandwiches so I tried my best to recreate it from memory and added my own twists.  I hope this post makes her proud.  This is for you, Mrs. Bernstein!
Italian collageIngredients:
(3-4 slices each per sandwich- I prefer Boar’s Head)
Hard Salami
Genoa Salami
Slicing Pepperoni
Ham (I choose Parmesan Pesto Ham)
(2 slices each per sandwich)
Provolone Cheese
Mozzarella Cheese (not in the original recipe)
Italian Hoagie Roll
Shredded Lettuce
Black Olives
Italian Dressing (I choose Wishbone House Italian because it has Parmesan cheese in it which compliments this sandwich well)
Italian Seasonings (optional- not in the original recipe)

Directions:
Apply Italian Dressing liberally to both sides of the bread but do not drench it too much or the bread will be soggy.  Put mozzarella cheese on one side of the bread and provolone  cheese on the other.  Layer meat (I like to folding each slice in half for a nicer presentation).  Add shredded lettuce and black olives and top with more Italian Dressing.  Sprinkle Italian Seasonings on top if desired.  Refrigerate for at least 30 minutes before eating to allow the dressing to soak into the bread plus it tastes better cold.

Happy 4th of JulyThis is a simple way to make elegant strawberries for 4th of July.  You just need fresh strawberries, white chocolate, and blue sugar sprinkles or any other 4th of July themed sprinkles.
It is very simple to make these strawberry and they come out so pretty.  My girls love to help me and anytime I can get them to help in the kitchen and spend family time with them is always a good time.

To make these strawberries wash and dry your strawberries well.  The chocolate will not stick wall if the strawberries are wet.  Melt white chocolate according to the package either in the microwave or with a double boiler until smooth.  Dip one side of the strawberry on an angle and then dip it on the other side at an opposite angle so it forms a “V”.  Allow excess chocolate to drip off back into the bowl.  Once you dip both sides of the strawberry I find that the dip into the sprinkles better if you allow the chocolate to cool slightly first so place the dipped strawberry onto a parchment lined cookie sheet.  Continue dipping other strawberries.  After about 5 minutes when the chocolate is starting to firm up a little, dip one side of the white chocolate area in blue sugar sprinkles.  Allow the strawberries to harden before serving.  You can put them in the refrigerator to speed up the hardening process.  For best results, serve the day they are made.  You can make them the day before, too, but don’t make them any sooner or they will not look as good and the strawberries will start dripping and pulling away from the chocolate.  Store leftovers in the refrigerator.

TIP- When you put the strawberries on the parchment paper I like to slide them forward slightly on the sheet so there are no big blobs of chocolate in front of the strawberry which should be the prettiest side.

Ingredients:
Vanilla Yogurt (about 1 cup per parfait)
Strawberries (about 4 per parfait)
Blueberries (about 1/2 cup parfait)
Raspberries (about 1/2 cup parfait)
Whipped Cream
Granola (about a 1/4 cup per parfait)
Sprinkles (optional topping)
Fresh mint (optional garnish)

Wash berries and cut up strawberries
Fill cup with a few tablespoons of yogurt
Place strawberry pieces in a layer on top of yogurt
Layer with yogurt
Layer with blueberries
Layer with yogurt
Layer with raspberries
Layer with yogurt
Top with granola
Top with whipped cream
Garnish with more berries, sprinkles, and/or mint as desired

Offer valid through June 30, 2013.   When you get them make sure  do the baggie test.  Put half of a piece of produce in the keeper and the other half in a baggie.  See which stays fresh longer.  All of mine stayed fresh longer in my keepers!

Easy Taco BakeI love recipes that are easy to make on a busy weeknight and this one certainly fits that.  Here is an easy Taco Bake recipe that my family loves (well 3 of us anyway, my little one doesn’t like Mexican so she gets something else on Taco Bake night). 😉

Ingredients-
1 can Hormel Chili with Beans
1 can whole kernel corn (drained)
1 can diced fire roasted tomatoes (drained)
1 can refried beans (I prefer traditional)
1-2 cups shredded cheddar cheese depending on how cheese you like things
1 bag tortilla chips (any brand)

Toppings-
1 cup sour cream
1 package dried Ranch dressing mix
Shredded lettuce
Sliced black olives
1 Can Rotel (any variety, I like the one with tomatoes and cilantro)

taco bake 4 final 21. Preheat oven to 350 degrees.  Layer tortilla chips on the bottom of a baking dish.  They can overlap and don’t have to be totally flat.
2. Spread chili evenly over chips.
3. Spread 1/2 cup shredded cheddar cheese over chili.
4.  Spread can of corn (drained) over cheddar cheese.
5. Spread 1/2 cup of fire roasted tomatoes over corn
6. Spread refried beans over tomato layer.
7. Spread 1/2 cup shredded cheddar cheese over refried beans layer.
8. Bake for 15 minutes on 350 degrees until warm throughout.

9. While taco dish is backing, put 2 large handfuls of tortilla chips inside a plastic bag.  Use a rolling pin or can to crush the chips.  Kids love this part!
10. When taco bake is warmed throughout, spread crushed tortilla chips on top.
11. Sprinkle tortilla chips with cheddar cheese.
12. Bake until cheese is bubbly.
13. Combine 1 cup sour cream with 2 Tbs. of powdered Ranch Dressing Mix (optional).
14. Serve with shredded lettuce, Rotel, black olives, Ranchy sour cream, or whatever taco toppings you like.
It doesn’t get much easier than this!
